I recently posted on the vlog how I taught Mr. Fantastic how to roll lumpia (a Filipino fried spring roll) and said I would share my recipe here. Try it and enjoy!

My recipe is, in fact, from Panlasang Pinoy (no imagination or creativity here, ha!). And yes, I did copy it onto my notebook since I found it easier to follow instead of having to scroll on screen all the time.

The only difference I did is that I cooked it with an air fryer at 200 degrees C for 12 minutes, flipping (rolling) it at the halfway point. It did not get the golden brown color of when you deep-fried it, but it was crispy enough and still tasted great! The best part about it is that Mr. Fantastic said he enjoyed wrapping the lumpia. It was a nice couple bonding experience for us.

The more I think about it, the more I realize that many Asian recipes are made this way — dumplings, gyoza, and many other rolls. We recently also made wontons. I find it efficient that we can make a large amount, freeze them in batches, and then easily use quick meals.

I’m glad that even if I’m far away from Asia, I can always have a taste of food that brings me comfort. I’m also happy that Mr. Fantastic is always game to help make the food I crave. And, I promise I also help him make his people’s food. 😇 I’ll make sure to feature it next time.
